    Windows Backup

It seems to be scheduled for once a week by default.

I'd prefer to have email and photos backed up as they are added, is it possible for Win 7 backup to do this, or should I be using some form of third party backup software?

If so, can you recommend any free, easy to use backup apps?

    Thanks :)

    Welcome
You can use back up and restore to make manual backups, as needed

For automatic backup in realtime, you can take a look at Genie TimeLine

I recommend Acronis backup software, It has lots of options and can also create images of your boot drive if you wish. Scheduling backups is pretty simple, where you can pick and choose what to backup, when and where.
I use Acronis to make an image of my boot system at least once a week.

For imaging, I suggest you do this manually ~ 1-2weeks try:
    - Windows inbuilt imaging
    - Macrium Reflect (free)

    For file/folder backup
    - Inbuilt windows scheduled backup (untick automatic image creation) and select relevant folders.
or maybe better for your purpose
    -MS SyncToy (free)
