Hello drewdog and welcome to Seven Forums.
My usual disclaimer: I'm not an expert in anything. But it's my understanding that a .iso image (or .iso file) is an "image" of an entire CD, DVD, or BD. The entire contents of a disc can be made into a single ISO file.
What is an ISO File? (ISO File Definition)
From that, I don't think it's possible to make a system image as a .iso file while the system image is being made. If I'm wrong I'm sure other forum members will jump in to correct me.
