Using wbadmin to perform incremental/differential backups

I'm using the below command to save a complete image backup of my system partition and I run this whenever I do a significant change to my system.

WBADMIN START BACKUP -backupTarget:E: -include:C: -allCritical -vssFull -quiet

When running 'Restore your computer to an earlier time' letting the computer reboot to restore the image where I'm to select which backup image to restore from I always only see the latest image created.

What do I need to do to be able to save more than one version of my system partition? Let's say I perform an image backup once a day Mon-Fri and then on Sat I want to restore the backup image created on Wed. The way it works now I will only see the image created on Fri.

I understand I need enough space set aside for backups on the disk where I save my image backups. In my case the system partition is approx 40 GB and I've reserved 100 GB for system protection on my disk where I save the backups using the below command.

vssadmin Resize ShadowStorage /For=E: /On=E: /MaxSize=100GB

To me this would be more than enough to let me create several versions since my system drive is about 40 GB and then there's about 60 GB left for incremental/differential backups since the first full backup.

For performance reasons I have System Protection set to OFF both on my system partition drive as well as the drive I use for saving my backup images. Is that the reason I only get the last backup version (Fri in above example) to choose from when restoring or is the problem rather that you can't do incremental/differential system image backups using wbadmin?

Guess it goes without saying considering what forum I'm posting this in but obviously I'm using Win 7 and more specific the x64 Ultimate Edition.
