Finding my emails after a restore

I recently did a backup using Windows Backup to an external drive. I did a fresh Windows 7 install. I realized I was using Outlook (I'm not sure which version) and did not make a separate backup of my e-mail and e-mail settings assuming they would be in my Windows backup file. I have now restored, but of course I don't have Outlook now as it's no longer available. I'm trying to find all my Outlook files in the restored data files so I can perhaps export them somewhere. I can't seem to find them. Suggestions are welcome.

I think you have to find the PST[?] file somewhere on the hard-drive. I do not know how one would be able to extract emails out of such a file. Maybe others here will have an idea.
