david already answered the licensing question: Yes you can use the exisitng product key over and over

Use the COA on the sticker first, your notes might refernce an Office product - not sure (I can't decipher my notes either ). If that fails you might have to activate Windows using the phone option. Since you've only install one previous time and it was over a year ago, it is doubtful that the key has been flagged, but you never know.
Ms is fairly good about their licensing.
Windws 8 - dunno. If I were moving to Eight, I would not get the RT version, get the Pro. I've heard a lot of grumbling about Eight, but that doesn't mean much - I've heard a lot of grumbling every time MS does something new. People resist change and they grumble
I've heard a lot of good things about Eight, mostly great perfomance and speed.
I've only been on Seven for anout a year and am in no rush to move to Eight. Do you need it? What does it offer that Seven doesn't?
Go to an office store and play for a while on one of their systems. See if you feel comfortable with eight, learn a little about it first.

The log files for Windows Defender Offline are stored in a MPLog-MM/DD/YYYY-HH/MM/SS .txt file in the folder below on the computer that was scanned at boot.
