What are you using for the E-Mail Client? The Windows Clipboard can hold only one item at a time, clears that one out when doing another Copy or PrntScrn function. Turning off or rebooting the computer clears the RAM/Random Access Memory which removes anything in the Windows Clipboard.
This is for the Windows version:

Don't know which version of Office or Outlook you are using, each is different from each other. Some versions of Microsoft Office can hold more items, it's a separate clipboard from the Windows version.

Clipboard is part of Windows and still exists on the latest versions. Copying to the Clipboard makes the item available to Paste into a chosen program, e.g. MSPaint. Test it by pressing the PrtScn key then open Paint, in Start, Accessories, click the Paste icon or Edit, Paste to see what you get.
