Hmmmm.........Coffee is a way of life in South India. It is always coffee after breakfast and evening snacks and a welcome-drink when guests arrive. South Indians will feel like a fish out of water without coffee, and that coffee will always be the thick brew plus hot milk and never the black coffee.
At home, I always make my brew with the Italian moka pot, the poor man's/woman's espresso coffee maker - Moka Pot, Moka Pot Instructions, Stovetop Espresso Maker Instructions, How To Use A Moka Pot, Espresso Coffee
Moka pots are not easily available in India and unknown. (They use a traditional Coffee filter to make the brew.) What I have at home is a two-cup moka pot and now a four-cup is on my shopping list here in U.S.A.:)
I'm addicted to coffee! 23 years in the Navy and 16 years driving a 18 wheeler. Kept me awake on those long hauls across the states.
Because it symbolizes civilization, having best grown in high mountain reaches, gathered by individuals, carried in sacks by pack animals, traded/sold, gathered, stacked, stored, cleaned (sometimes), roasted over fire (the greatest step forward for mankind), cooled, resacked, labeled with the proud emblem of the owner/agent of commerce, shipped, distributed resold, resold, resold, repacked in ever smaller containters for ever higher markups, until they appear in my local store on online catalog in every imaginable combination of natural acidity or controlled roasting, or the raw bean itself, for roasting it yourself at home, and the aromatic oils fill the air, where you can tune out the ordinary moments you are about to face during the day and try to transcendentally attune to the world.
