I like Eggs Benedict very much, but if you want a really good egg breakfast sandwich, you just soft boil one large egg per sandwich, making certain that all of the white is done and the yolk is not runny, yet not totally hard. After cooling them a bit, remove the shell, and if you have a hand blender, drop them in the bottom of a coffee mug, place a tsp of oleo, a dash of garlic powder and one of Italian Seasoning, salt to taste, and blend until it is still somewhat chunky, If you time it just right, while doing all of the above, you have heated some English Muffins, and a slice of turkey pastrami, or ham, and you sandwich this with the eggs in the muffins, and you have a super breakfast.

Despite this, it has been a while since my last Eggs Benedict, so I may try that next.
