Dude, Stabbing Westward rules. The lead singers new band is called The Dreaming, and they have some damn good songs too. You should check them out. The Dreaming.

Hells yeah, sometimes symphonic metal is just badass.
Though I like to break it up with the really heavy stuff, Slipknot, Lamb of God, Dimmu Borgir.
Metallica's S&M Album is along those same lines, and is really cool. It is Metallica playing on stage with a whole symphony background.
Also, Apocalyptica is similar, but they use Cellos as the main instrument, and they sound really cool.

I'd still say Dream Theater is worthy, it's an unusual band that the music stands out from basically extreme experts at their instruments, and the singer is the replaceable component.
I like all forms of Rock, how did you get stuck on POP Rock?

Assuming you like the guitar:
Try more obvious choices like Led Zepplin, Rush, Van Halen, Motley Crue, Stevie Ray Vaughn, Joe Satriani, Lynyrd Skynyrd, Def Leppard, AC/DC, and Pink Floyd.
I went to Lala '93, was my serious intro to alt. rock, Rage Against the Machine was first and phenomenal!
Tool was other favorite now from there as well.
Other things to chew on: Simon and Garfunkel, New Christy Minstrels, Devo, and Dropkick Murphys
(I am not completely stuck on Rock genre)
