The technique I use is to start withe the parts in the background and work forwards. You can look for areas of similar color or with simple gradients to act as the building blocks and use either the Bezier or the Polyline tools to trace them. You can make sure you don't get any holes at the joins by having an outline of the general color of the area underneath or by slightly overlapping adjoining areas. Once you have the basic shape drawn you can add whatever detail you like on top of it.

Keith pal have you tried messing with the "mesh fill" tool in CorelDraw ? You can get some really interesting effects which might help with your vector images especially when it comes to the camouflage and shapes which bend differently. examples. below (remember the rose & aeroplane wing were done in CorelDraw - No photopaint or photoshop used)
I made a tutorial on this quite a while back, this was how to make a chrome orb but the same concept is used for odd shaped images, give us a shout if you get stuck
