Windows 7: Support Information and Logo & Delete Unnecessary stuff

Support Information and Logo & Delete Unnecessary stuff

Normally i have used Tune Up utillities for this but i want to be able to do this manually on systems i build.
See below images to see what i mean
1st image how do i edit the support info without using tune up? Im sure there is a way.
2nd image how to delete these old back ups and Unnecessary files?
