Should be able to just right click on the explorer icon, then right again where it says Windows Explorer, then Properties, change icon. Point to where the new icon you want to change to is, and apply. Might have to reboot for it to change.

Have you tried Right clicking the icon and selecting "Unpin this program from taskbar", Then repinning it from the shortcut in the startmenu?

I tried this myself. Goto your root drive and then to windows. Right click on explorer.exe, create shortcut. right click on the new shortcut and change the icon.
In the taskbar, right click on explorer icon and unpin it.
Now drag the new shortcut and put it in the taskbar.

Considering what system files you might have changed and what not, you might run sfc/scannow and see if that will fix the problem, but be aware it will replace/restore any original system files that have been replaced/damaged. i,e, third party themes will be replaced, etc..
