It appears that the option to disable the taskbar preview thumbnails is no longer available in Windows 7 in these later builds. I'll keep looking to see if I can find a way to do so other than the normal methods that were listed here.

K, it worked for like 1 minute then it went back. I have no idea what happened or why, but the thumbnails are back now .
Well, since this is part of the Aero feature, a workaround is to use a Basic or Classic theme instead of a Aero theme. You would then not have thumbnail previews for the taskbar.

Already knew about that, a shame it doesnt work with Aero enabled :/
I'm not sure why Microsoft has removed this option either. Hopefully it will return in the next build.
Ok I found out why it was gone before, if the thumbnails are wider than my resolution is it becomes text instead of images. :/

I'm not certain I understand what you mean by if the thumbnails are wider than your resolution. Could you explain what you meant more?

Sorry if I wasnt being clear, I mean if there are enough pictures that the combined width of them is wider than my screen is, it becomes text instead of images.
I'm not on a 7 box right now, but if you go to apperance and performance section(not sure where that is) there's a whole list of items you can check/uncheck. One of them there allows you to turn off the thumbnails.
(I'm pretty sure I saw it on my 7077 build at home, recently)
