It's possible to change the icons (minimize, maximize, close) of the windows 7 Ultimate on the title bar?

Windows XP - Now Windows 7 Home Premium (64-bit).
 
 

Not readily through W7 I don't think -- perhaps only via third-party utilities.

Nope ! Even Ave's Windows7 Style Builder doesn't have a trial version. It is a bit difficult to understand, too !
So better you go to Browsing Visual Styles 7 on deviantART, get your choisest themes from there, and apply as per the tutorial Theme - How to Apply Custom Themes
