    Logitech Cordless Deluxe drivers...

Does anyone know if there's drivers for the Itouch 2.15 that went with the Logitech Cordless Deluxe KB & mouse please?

    No there isn't,

Vista Support Infomation: iTouch / MouseWare users - Logitech Forums

Other than using whatever functionality you get from the native Windows drivers, about the only hope you have is to try Setpoint,

    G5 Laser Mouse

Don't worry about that being a mouse, Setpoint is the same for all keyboards and mice that support it, just need to select either the 32 bit or 64 bit version. No promises that it will work but it works just fine for me on an older computer that is using a Media keyboard and MX510 mouse, neither or which are officially supported under Setpoint (in fact the mouse used the old Mouseware, similar to iTouch only for mice) but both are detected and all keys/buttons are configurable.

Doesn't matter whether you call it a driver or software, there is no iTouch for Windows 7 (or Vista for that matter). Like said give Setpoint a try; at best it works with your keyboard and mouse, at worse it doesn't and you uninstall it (and stuck with whatever functionality Windows will allow for).
