Not just a 64-bit issue; had the same problem with a 32-bit machine. did a clean Win-7 ultimate install and the ScanSnap would not work.
Did Step # 2, rebooted, and it worked.

Hey all, thanks for the information above, and the link to s/w that might work with Win7 x64. I need more information tho to make sure that I do it right.

I have the s/w now, but don't quite understand the "then had to go into...." part about directing windows to manually find the driver.... Where do I direct it to LOOK? What file directory?

I believe when you install the program you will tell it what directory to use.
Barring that, my scanner says it's using ksthunk.sys and usbscan.sys. Try doing a search of your hard drive for them.
Sorry I can't give you a better answer. I installed it long enough ago that I forget details like this. However, it wasn't that hard to figure out.

In response to reson8tor's question, when I ran the setup.exe file from the CD download it installed the ScanSnap Manager program, etc., at C:\Program Files (x86)\PFU\ScanSnap. You will find several subfolders here, including a Driver folder.
Once I had the software installed I followed these steps:

Plug the scanner into the computer (USB) and turn it on (open the top).
Go into “Devices and Printers” in Windows 7 and locate the "unspecified divice" icon that represents the scanner.
Right click on the icon and select Properties-Hardware-Properties-Change Settings-Driver Tab and select "Update Driver"
I selected "Browse My Computer" to manually browse to the Driver folder at the location described above, and I tried to manually load the driver, but it failed to load.
I then selected "Search automatically for updated driver software" and it found the driver - a red warning box about installing unsigned drivers appeared, but I clicked to install it anyway.
The driver installed for my fi 5110EOX2 and it appeared in the Divices and Printers list. Success! My scanner now works great.
Note: After installing the CD software I also ran the driver repair tool (suggested by some folks who had done this). It's in C:\Program Files (x86)\PFU\ScanSnap\Driver\SsDrvRepair folder: a tool called SsDrvRepair-x64.exe It returned an error message, so I'm not sure if it did anything.
I did manage to get my scansnap scanner working fine in Win 7 x64 by following the instructions. I did NOT have to specify the driver after following the installation instructions. I merely installed the downloaded s/w, opened the file to fix the driver in x64 environment, ran the exe, and then clicked thru all the warnings. Win 7 then noted that the driver was found (automatically) and I hooked up my scanner. It works well.
