I tried to run the setup both in Vista and Win XP(service pack 3) compatibility modes but it still freezes without any errors...I had the same problem with the Call of Duty - World at War but the compatibility mode fixed it :S I'm using win 7 ultimate 64 bit
Have you had a look at this it describes several problems with AC, i realise that it doesn't cover your specific issue, Though have you tried uninstalling the game through control panel, then deleting the Ac folder in program files and trying to re install? or does the installer not even launch?

I've had the freeze problem during the install of the 3 versions of Assassin's Creed but I found out that after the installation begins click Cancel (the window for confirmation will pop up but click you dont want to cancel the install) after that it install smoothly :) I hope it helps anyone getting problems with the game :)
