New to gaming with a dual screen question

My spec's are listed and I'm looking to enjoy GTR Evolution and Richard Burns Rally with my dual screens if possible but all my setting changes have the GTR on one screen only?

Unless it is something like a RPG type game that actually supports dual monitors, for a racing or shooter type of game I wouldn't bother unless you want everything split down the middle. For those kind of games 3 monitors will be fine as your crosshair/etc will be on the center monitor, but kind of hard to drive or shoot anything when split down the middle.

Mostly interested in the driving games but I see your point with 3 screens you have a perfect balance of center view and side peripheral views. Id still like to know if it could be done and give it a try but maybe I 'll change it right back. Too bad I don't have the real estate to run 3 screens with out pushing my better half's side of the desk out.
