You should be able to play sim theme park while using Windows 7, i have a game from '98 and it works perfectly so it should too. Just run it in Compatibility mode.

I use the normal graphics. For running in compatibility mode you just need to do as follows:
    1) Right click on the desktop shortcut
    2) Click on Properties, opening up the tab on your mouse
    3) Click on the Compatibility tab on the top bar
    4) Check 'Run this in Compatibility Mode for:'
    5) Open the bar under it and choose either Windows 95 or Windows 98 (both of those will work)
    6) Apply, exit and play.
    Hope this helps :)
