1) No Clue, sorry.
2) IMO x64 is the future. If u want to update your RAM to more <= 4 GB Ram you should stick to x64. How much is recognized of the other devices your using like graphic card and other things that were used by default. x86 can adress only 4 GB of Ram.. but some bandwith is reserved for PCI,PCIe, AGP whatever.
3) In all tests that i read there is no noticable difference in FPS. Most times it was something like 1-3 fps lower on x64. But if u use <= 4GB RAM you will have much better loading times.. the tests i read were from Vista and XP.
4) Dont think that there is a difference, but im not sure.
5) If you don't need all the features of the other Version, you re definetly fine with the Home Premium Version. I personally will stick to the Professional because i want to use the XP Virtualization.
6) I never heard / read that there is difference in security! so -> NO
