They are really all about the same. The starter version probably is the absolute lightest through.
Any of them will run well enough with 2 GB of RAM. 4 GB may be a noticeable improvement--maybe not.
RAM is so cheap now that I wouldn't make my version decision based on any minor differences in resource usage.
What might matter is what you intend to do with Windows once it is installed.

Windows 7 Starter or Home Basic would use the least and be cheaper, but not that much less resources used than the others. What's really important is what features you need to have in Windows 7, and then compare the editions to make sure that they have them included.
