Truecrypt is the one you hear about as I recall. But I think encryption is available built in as well, on certain Windows versions. It's called Bitlocker.

Just a few thoughts.
1. Windows 7 is very picky about some things. Windows 7 doesn't want or need any Tune Up programs of any kind.
2. Itunes is Apples way of screwing up as many Windows PC's as possible.
3. Microsoft Security Essential works great with Windows 7
4. Windows 7 built in firewall is more than enough for most
5. Windows 7 defrag works as well as any
6. Windows Search in Windows Explorer really does work quite well
7. Windows 7 does not want it Services mess with
8. Windows 7 Library takes a little getting use to but works great.
9. Windows 7 is not like the older operating system and will take just a short time to get use to it.
10. If you have any dough or questions about something please ask here before doing them.

Yeah, it definitely seems like a different Microsoft than what I was used to. So far everything is working beautifully (and somewhat easily).

I like Stellarium, Karen's Power Tools, Oracle VirtualBox (VBox), LibreOffice, MS Office 2010 to name a few.

VirtualBox looks interesting, though I don't seem to have a need for virtualization. Gonna have to look into the power tools.

How hard would it be to set this box up to also serve as NAS?

VBox just makes it convenient to set up different Linux distros that can be started when in Windows (or the other way around - start Windows when in Linux).

Not sure about Windows 7 as a NAS controller (maybe Windows 2008R).

Yep, Bitlocker is only available on Ultimate - TrueCrypt is indeed the other good alternative, but whole drive encryption can be a tricky business.
