Redirecting data packets...

Hey, not sure where to post this....

Hello everyone, to start this off, here's what im using for this:

Windows 8 --------- charles proxy installed
xbuntu 12.04.1------"server"
iPhone/iPad --------- my game is installed

I have successfully made a game for iPhone, iPad that require internet connection to play.All data is sent to my server.

Using my windows 8 PC and Charles proxy, is it possible to redirect all data packets from my iPhone to be saved on the windows 8 pc, or another server, so i can manipulate them.; if there is an article on this somewhere, please let me know. Otherwise can i get instructions please?

I have successfully recorded the traffic with Charles, but im not getting new data in every time i click an 'accept' button, or 'send' for instance. It just has one same list of files/data that doesn't change no matter how long I've been on the game.

Is there a way i could redirect everything that's being sent from my iPhone to my server over to my pc? Can i do it using charles? or are there special programs for that?

I don't exactly know much about all this, but I'm not exactly a noob either. Thanks in advance.
