Explorer navigation and program menu questions

I've recently upgraded from XP to 7 and I like it better, on the whole. There's a couple of niggly things which I've managed to change with 3rd party freeware applications (such as Explorer windows remaining in the format they were when you last visited them), but there's others I'd like to change that I've not yet found a solution for. So I thought I'd ask whether anyone here knows of any solutions. The first is the way Explorer navigates, particularly how it interacts with other programmes. I use Notepad for quite a few things, and it has files saved in different places in different drives. Back in XP, if I opened Notepad and selected "Open" from the File menu and it was in the wrong place I could click the arrow to the right of the address bar and I'd get a drop-down menu with the whole tree of where I am and everything in "Computer". Now if I click that button I get the location I'm in in text with no way to change it back to something navigable, or I can click back through the folder tree one folder at a time, or I can click on the button marked "
