I have upgraded my 7 to 8.1 but still run it 7 style and in hindsight would not have gone there.
My query is some of my documents are being saved on that One Drive program / app and I do not like it because I very suspicious of anything to do with "the cloud" in fact I am very tempted to save what is in that thing and uninstall it so how safe is it?

For now you may want to try these to lower your immediate frustration.
This 8Forums tutorial tells of how to save to onedrive, but, in step #'s 4 and 5 it tells you how to stop it.

This one from Microsoft Answers is pretty much the same thing only you use the keyboard to get there, see answer, second post down: Office default save to local folder, NOT Sky Drive? - Microsoft Community
This one from the windows club uses group policy, which you should have as I see you have the Pro version of 8: Make Windows 8.1 save Documents locally, instead of OneDrive
There are more ways, try searching for - stop documents from being saved on One Drive program 8.1 - That's how I found these, but I believe they all boil down to movin' that slider to the left, except when you can use group policy.
How safe is it? Well that is a subjective question you'll have to read the reviews for yourself. Personally, I do not use it.

One sure fire way to end this is to switch to a Local account.

Thanks everyone as not only do I distrust that stuff but not finding saved docs where I think they should be also means wasting a lot of time searching out One Drive:)
