If nothing else works you might be able to reset BIOS to defaults by an external method Clear CMOS - 3 Ways to Clear the CMOS - Reset BIOS to see if maybe a setting was change to accomodate a video card and not changed back. It's kind of a long shot and others might have better ideas, but what I would do before I'd give up.
I pulled the battery on the mobo out and everything is working fine. BIOS is recognizing everything.

Thanks for everyone's help

Glad to hear it. I'd boot into BIOS setup and familarize myself with the settings for the onboard video since it might have been toggled off when the missing video card was installed.

How is overall performance? If you're still interested in reinstalling or installing 7 I'd also try the SATA controller's AHCI setting in BIOS setup during the booted install during which you delete all partitions as discussed in Clean Reinstall Windows 7.

I actually installed Ubuntu 14.10 because this computer's purpose is for big downloads and such. I wanted to install an OS that wasn't going to be putting too much stress on the older equipment.

Overall performance seems to be pretty good. I've only briefly played around with it.
