Unless you *must have* XP compatibility mode, or bitlocker, or the ability to join a domain, then Home Premium will suffice (even if you do need XP compatibility, remember you can dual-boot with XP or run XP within a virtual environment too...) for the vast majority of users... | My System Specs | | System Manufacturer/Model Number Custom built machine OS W7 x64 CPU Intel Q9300 2.5Ghz Quad LGA775 (Would like Q9650) Motherboard Gigabyte GA-EP45T-UD3R (F6 Bios) Memory 4Gb OCZ Gold 1,333Mhz Graphics Card Palit HD4850 O/C Sonic 512Mb DDR3, Dual DViD's Sound Card Azalia to twin Samson 50w Studio Monitors Monitor(s) Displays Twin Dell (E-IPS) U2311H 23.6" Screens Screen Resolution 1920 x 1080 @ 60Hz Keyboard Cherry PS/2 custom model Mouse Lenovo USB laser "Thinkpad" Mouse PSU OCZ 600w Case Lian-Li PC8 acoustifoamed' aluminium tower Cooling Scythe 140mm Zipang Hard Drives Crucial M4 SSD, archives on twin Western Digital Caviar Black WD2002FAEX, 2TB, 7200rpm HDD's, Samsung Ritemaster CD/DVD Burner... ok... firstly why downgrade? i know you say you dont really need it, but if you already have ultimate, why not just stick with it? as it has everything? sure you might not need all the features now, but what if you do in the future?
but if your set on downgrading then go home premium, as professionall is just ultimate minus the enterprise stuff (which as far as im aware most home users dont need? isnt enterprise just "proffesional" for businesses? sure someone will correct me if im wrong) | My System Specs | | Computer type PC/Desktop System Manufacturer/Model Number Self Built OS Windows 7 Ultimate X64 SP1 CPU Intel(R) Core(TM) i5-2500K CPU @ 3.30GHz Motherboard Intel(R) Core(TM) i5-2500K CPU @ 3.30GHz Memory 8GB 1333Mhz DDR3 Graphics Card NVIDIA GeForce GTX 460 Sound Card Realtek Monitor(s) Displays Acer Al1980, Screen Resolution 1360*768 Keyboard Alba USB Mouse IT Works Wireless USB PSU 750W Cooler Master Case Cooler Master Haf X Cooling Cooler Master Hyper TX3 Hard Drives 500GB SATA WBC

You have a good setup now. By downgrading you would knock off a few things, but not that many. Stay with what you have. You might not use them, but at least you have them. | My System Specs | | System Manufacturer/Model Number Custom Build OS Windows 7 Home Premium 32-Bit - Build 7600 SP1 CPU Intel Core i3-2120 3.30Ghz Motherboard Asus P8Z68-V LX Intel Z68 Socket H2 ATX Memory Kingston 4 GB DDR3 1333 mhz Graphics Card Zotac GeForce 9400 GT 512MB Sound Card Sound Blaster Audigy SE 24-Bit Monitor(s) Displays Samsung Sync Master 940 = 19 inch Screen Resolution 1440 X 900 Keyboard Microsoft Natural 4000 Mouse Microsoft Custom Optical 3000 PSU 500 watt Case NZXT Apollo - Silver with Clear Side Panel Cooling Three 120 mm Fans Hard Drives OCZ Vertex 3 120 GB Sata 3 SSD ==

As others have mentioned, there's little point in downgrading, unless you can sell your retail copy of Ultimate to someone else for more than it would cost you to buy Pro or Home Premium. If that's the case, no one else can tell you which version to get besides you. Look at the chart on Microsoft's Windows 7 page, and decide based on your own needs.
All in all, I'd keep what you have. It's not like Pro or Home Premium will perform better, so I'm at a loss as to why you'd want to downgrade. If you haven't purchased an OS yet, then there's little reason to get Ultimate. | My System Specs | | OS Windows 7 Ultimate x64 SP1 CPU Intel Core i7-2600 Motherboard Gigabyte GA-P67A-UD3P-B3 Memory 12 GB Patriot Extreme DDR3-1333 Graphics Card Nvidia GTX 470 Monitor(s) Displays Dell UltraSharp 2209WA PSU OCZ ModStream 700W Case CoolerMaster HAF 912 Advanced Cooling CoolerMaster Hyper 212 Plus Hard Drives OCZ Agility3 240 GB, WD5001AALS, WD7501AALS |

You don't have to do that you can just remove them from "Turn Windows Features on or Off". Not everyone knows how to use Group Policy Editor nor do they care to learn how. I try to keep from giving people the most complicated solution I can think of.
