Windows 7: Permissions

windows 7 ulitmate

I have just bought a new laptop with windows 7 ulitmate, and am setting it up. I want to alter the error.log for apache.

The permissions are driving me nuts.

I am the only user - Edward(administrator)

I right click the file, and set ownership to Administrators (edward/laptop)
I then open up the security options for that file again to check out the ticks for the users.
They say,
everyone - full control ticked in black
system - full control, grey
Edward (edward-laptop\Edward) - full conrtol in black
Administrators - full control - grey
Users - full control - black

Now I expect I am doing something wrong (obviously!) because when I edit out the file and try and save it windows 7 wont let me.

Please can someone help!
