I would check and see how Bootcamp/Windows 7 sees the Monitors. If I recall correctly, Bootcamp just emulates hardware, so it may not be passing the correct information back to Windows 7 to allow for proper identification. The other alternative is to load up the hardware profiles of the monitor directly within boot camp and not let it use Plug and Play monitor definition.
