Depends on the game. Some can be changed in the INI (if available), and some by using command line edits; like Battlefield 2 before they added WS support in the last patch 9says demo, but same applied to the full version),

If you can set it via the INI method, make sure to have the rest of your in-games settings how you want them in game, then make the resolution change in the INI and set the file to "read only" so it can't be reset when the game is run.BF2 gets it's WS support through a Command Line edit:
"C:\Games\Battlefield 2 Demo\BF2.exe" +menu 1 +fullscreen 1 +szx 1920 +szy 1200
