Amd 975 vs 1090t
The 970 runs at 3.5 Gigs and is a quad and the 1090T runs at 3.2 Gigs and has 6 cores but I don't think the extra 2 cores at worst having so which one would be the best one and why?

It's all based on preference and budget. IMHO, AMD it the best bang for the buck. In benchmark test's Intel out performs AMD across the board. That might change with the new CPU AMD is going to release shortly.
I disagree that AMD is best bang for the buck. They are simple the lowest cost player in the market. I think when you compare outright performance per dollar, Intel has it right now.
I have the AMD 6 core (jumped from 4 to 6 when it came out) and I've been impressed. I've been able to run Win 7 Ultimate as the primary OS, and run Vista, XP, and Linux in a virtual environment, and talk to all os's and print and share files from one machine to the other, all at the same time. When I tried this with the 4 cores, it would bog down. So yes, it does make a difference.
