new future proof pc. LGA1155 lan gaming setup.

Hey guys, I had in mind what I was going to buy but I'll try for some feedback too.

Basically, i want a socket 1155 pc. I5 2500k for gaming? I will be ocing above 4ghz.
8gb ram? Id like low profile ram to fit under the noctua d14 cooler im buying.

The parts I am going with are as follows:
Corsair 600t white edition
2x Gigabyte Gtx 560
Coolermaster 1000w gold modular
Samsung 2tb hdd
3x 24" benq monitors (can I run triple monitors on sandy bridge?, or do i have to wait for ivy?)
Noctua d14 cooler
Artic silver 5 thermal paste
Ocz agility 3 120gb sata3 SSD

So I'm asking, what's a good board to use? (Asus if possible)
And ram for gaming. Ocing and to fit under noctua d14?
And I5 2500k over I7 2600k?
And I will be using sli, multi monitor gaming. I want decent temps and brilliant performance, but for s good price.

What's your opinion sevenforums? much appreciated.
