You need to decide if your're building right now or waiting for a few months.

If now, get the 1366 or 1156 socket top of the line Gigabyte or Asus motherboard

    Example

    Newegg.com - GIGABYTE GA-P55A-UD6 LGA 1156 Intel P55 SATA 6Gb/s USB 3.0 ATX Intel Motherboard w/ USB 3.0 & SATA 6 Gb/s - Intel Motherboards

Top of the line Corsair PSU and SSDs (2-5 of them with your budget) in some sort of RAID (1+0 perhaps)

    Example

    Newegg.com - CORSAIR CMPSU-1000HX 1000W ATX12V 2.2 / EPS12V 2.91 SLI Ready CrossFire Ready 80 PLUS Certified Modular Active PFC Compatible with Core i7 Power Supply - Power Supplies

Be sure to get the latest Intel SSD or SandForce controlled Patriot, OCZ, or Corsair SSDs.

You will probably want to look at Lian Li cases or maybe Silverstone (aluminum top of the line)

Make sure you get SATA3 and USB3 on your motherboard since that's the latest technology. Gigabyte "A" series boards have these now.

Good luck on the build. I'll be building at the end of the year....one just like this. (hopefully)

Intel Core i7-975 Extreme Edition = complete waste of money.

You could obtain very similar performance from an overclocked Core i7-920 as from the 975 Extreme Edition if you’re using an air cooler.

    I agree with cheeriokiller.

I am running an oced i7920 @ 4.0Ghz with NO voltage mods.

Save the money and perhaps get a 30" monitor OR go for an Eyefinity setup! If you choose an Eyefinity setup, be aware that a 5970 quadfire setup doesnt work YET.

Perhaps get one card and maybe get another when mature drivers come out. A single 5970 setup wouldnt do a 1980x1080 or 1980x1200 res justice!

    Good luck

definitely go with the Obsidian 800D case.

i7 920 will do you very nicely.

Water cooling, look here. I have the Domino on the i7 940.

    My choice of Mother board.

PSU, this is a very good one, at least I like it.

RAM, 6 Gigs or 12 Gigs if you have financial room for it.

SSD for the OS and one of these for data. If you hold off for a little while you might find the new VR 640 for very little more than the 300.

If you don't go for the obsidian case you might consider this case, I am putting my new i7 build in it.

Now, I will be updating my system specs once I have the video cards and two more goodies to finish the build, wish I had the cash for the SSD.

I agree completely. Just because you spend a great deal of money on a computer, doesn't necessarily mean that it will equate to a great or fabulous computer. It's better to wisely invest your money and get great bang for the buck.
