Hello Collin.

The best way is to install them to separate Hard Disk Drives (HDD) and boot them independently from each other using the one time BIOS boot menu; install one OS with only one HDD connected and when that one is booting good disconnect that HDD and install the OS to the other HDD while it is the only HDD connected, when finished and that one is booting good connect both HDDs and they will boot independently using the one time BIOS boot menu and not have dependency issues.

I shall not say on how to Dual boot, but what i can say is that all the games i have had for xp have ran on Windows 7 Ultimate 64 for me, i mostly had problems with the beta versions. There is usually a work around for some windows 7 games.

Since you have Ultimate, 3GB of RAM, and a CPU that supports virtualization, you could try XP Mode.

Risky it's not but it's not designed for games, it's designed for Line of Business applications. You can try running some really low requirement games but most games will not work. VMware Player would be better suited for that.
