I went in and deleted the ei.cfg file from the /sources folder on my TechNet downloaded Windows 7 Enterprise x64 disc, and it isn't asking me to choose an SKU.

It will be the same response as the one in Whirlpool...With Enterprise you only get Enterprise regardless of ei.cfg.
I don't understand why you are wanting to modify the ei.cfg if you have a Technet Sub....just download the build you want and the key to go with it.
