Using "Junctions" to move \users\ & ProgramData help needed by oldfart

I need to redirect all of my [\users\folder & its contents including the \public\folder and internal folders] as well as [ProgramData] to my hard drive from my new SSD using Junctions as this seems to be a reasonable way to do the task.
Having never used Junctions before and personally having memory problems (me, not the PC) I am having difficulty learning the process, and would appreciate some help regarding the flow of how it’s done etc.
I have been in computers all my working life but at 62 am well past my prime but can still pick up things fairly easily.
Project so far:
Due to the need for speed on the PC I decided to use an SSD as the main boot device and have installed it and moved Windows 7 32bit from the 2GB Hard Disk to the SSD leaving all of the data on the HD and only transferring what was absolutely necessary for windows to work.
The SSD is 120GB and this process has used 57% but includes a lot of dead wood which I need to set up the Junctions for.
I need to leave as much room as possible so that I can do a clean install of "Windows 7 64bit in a dual boot", again with only the necessary parts installed on the SSD and the [/users/folders] and [ProgramData] on the HD.
The speed increase for the current 32bit Windows 7 is incredible and if I can achieve the same with the New 64bit clean install of Windows 7 I will be very happy.
I think I have seen something about setting up Junctions in these forums, but being a bit over the hill, I can't remember where
I also need a bit more help than just setting up Junctions anyway (says me scratching my head, and looking for my glasses)
