It sound like you have two issues. The first issue is easily fixed by editing the "boot menu". There you can change "windows 7 ultimate (recovered)" to what ever you want to see. The Windows 7 tool for that is "BCDedit". Here is a tutorial for using it:

There are other "third party" utilities available to edit the boot code like
EasyBCD.
I found
Vistabootpro, or just BootPro now, very easy to use and well worth the small fee of $10.
The second issue requires more information. How did you install 7? Did you use a DVD? Did you install the RC, build 7100? or did you install the RTM, build 7600? or something else? Did you have problems installing that required a "recovery"?
Please post back with more info to pursue this issue further.
