Forget the XP, it is completely irrelevant what language or edition it is. It is this simple: if you have bought an English Windows 7 Upgrade install media, it is in English and will install an English Windows. With it you can do one of the two things:
- Clean install as Ted and Greg here above have told you
- In-place upgrade an English (and only English!) Windows Vista. In-place upgrade from XP is not possible(*)
Nothing else is possible.
So, backup your personal files to external media and then completely forget you have ever had a Polish Windows XP, boot using the Windows 7 upgrade media and follow the instructions on tutorial mentioned in Ted's post (post #2). The only product key you are going to need is that of your new Windows 7 upgrade.

(*) = Theoretically it is possible to in-place upgrade XP to 7 using Vista as a "springboard" as told in here:
Upgrade Install - XP to Windows 7. However, the tutorial was made more out of boredom than real need, even I as an in-place advocate cannot recommend this method.
