When I go to the Documents tab in the start menu I have a folder called "My Documents" is thier anyway to get rid of that folder so all my documents display in Documents?

The link on the start menu is to the documents library.
If you open the library and from the ribbon select organise, then layout, and deselect the library pane option - if I understand your question correctly that may improve things.
