Jonny, you are certainly welcome here. Just want you to know that you'll get a more balanced view if you also tap the Ubuntu forums, as many issues such as Disk Mgmt not seeing Ubuntu contents are not known to Win7 installers. Normally you can get answers from our Ubuntu users here, but they seem to be away this weekend.
I'd browse the contents of your Win7 partition to see if any XP files are still on it. When you install Win7 from another OS, it will put all of the files from your old installation into a windows.old file which can be deleted after making sure you have all your files safely moved over.
Is there something else that makes you think you still have XP on the Win7 HD? True it isn't as clean of an install as when you boot the installer to use the Custom>Drive Tools to delete, recreate then format the partition, but it would be unusual for Win7 not to fully overwrite XP.
