Maintain control when opening levels in Outline mode (Word 2007)

Issue: while in Outline mode (Word 2007) a document automatically opens with every level expanded (levels 1-9).

Goal 1: have document open with all levels collapsed.

Goal 2: when I click on the plus sign at left to open a single level every level below opens up (1-9) but I only want the next level to open (level 2, or if in level 2 then only level 3 to open, etc.) in that section. I want control on what opens. [this is the main issue that needs to be resolved of the two issues]

Note: while it is possible to close all levels with two clicks at the top that is not preferred (I will do this if no solution is possible for this particular issue). Also, using the task bar on top to open level two (or three, four, etc.) opens level two for each main section, which is not wanted. I only want the one level to open that is clicked on and then only to the following level (not subsequent levels).

If someone knows of a good solution, please let me know.
Thanks for your time!
