Changing Colors With Office Pro 2003 - How?

Running 64 bit Win 7 with Office Pro 2003. Everything works as it did under XP, however, no matter what colors I change under Win 7 themes the border colors are not effected. I seem to be stuck with the "stock" MS blues, which are a light baby blue border with navy title bars. I always ran the silver scheme under XP, the blue scheme gives me a headache.
As I said, I've changed the themes under 7 to a basic silver / grays, and even the boxes within Outlook (such as properties) are gray, just not the borders, title bars or background colors.

Thanks in advance.
