Does anyone know why when I copy videos to my 'My Videos' folder I have to reboot the PC before the PS3 will see he new videos? Is there an easier way for getting the PS3 to notice them?

Have you tried simply resetting the connection? As in, briefly unplugging the ethernet cable (or disabling the wireless adapter, whatever your setup dictates)?

Have you tried opening windows media player and letting it scan for new items added?
That's what I usually do, it should take a few minutes and hopefully it will then be added to the library.
Have you tried using PS3 media server instead? Its a great piece of free software that is able to transcode many different types of files on the fly so no need to convert any thing.
