Winter project: DNS and DHCP server

A project I have on tap for the coming dark months is to get my own DNS and DHCP server up and running on my small home network. Why you ask? Just for sh!ts and giggles really and to learn about the process and technology.

I have a student copy of server 2003 and 2008 that I got when I took my IT course a few years ago. If I configure one of these OS' with the DHCP and DNS roles will the rest of the clients in my network be able to find the server without being in a domain?

What I am asking is does server '03 or '08, configured as a DNS and DHCP server, require a DC to work properly or can they work on a standalone basis in a workgroup? Are there other options for DNS and DHCP software?
