Sync offline files to a new server or hard drive

Hi everyone. First post here although I've used the forums before. Hopefully someone can help. I had two hard drives in a NAS that I kept my media files on. Between the drives I had about 1tb total data. I had both drives mapped to my desktop and had them set up to sync offline. Lets say these hard drives both crashed and I lost all the data on them. Is there some way to recover the full, actual files from the offline folder cache on my desktop? Or perhaps set up a new server, map the new drives to my desktop, then sync the offline files back to these new drives? I'm looking for anything here. Some of these videos were very important. Thanks in advance!
