I wish to have a Drop Off folder that is write only,
In the security tab, checking off "Create files - Create folders - Write attrib - Write ex attrib" for Everyone allows the functionality but it doesn't let them open the Drop Off folder, they get an access denied. They can drag and drop into it but I want people to be able to actually enter the folder, have it appear blank and be able to paste/drop their files in and have them "disappear".
To open the folder they would have to have read permissions. I am not sure what you wish is possible. How many users is this to support? It may be worth setting up an individual drop off folder for each user to drop into and then allow them to have read and write permissions with their individual folders only. Then you can assign your user account to have full control over the entire share.

About 10-15 users, and they each have a Drop Off folder. I need to somehow give permissions for people to enter the folder and paste but deny the directory listing. You're right, I think it's impossible.
Hmm... You could, allow read permissions to the share but change the NTFS permissions of the local folder to prevent execution. This means that they can open the folder but are unable to open any files placed in side. In theory that is, I haven't tested this and as for preventing directory listing... I do not know how that could be done

I don't think the Windows shares support this possibility, as Windows normally requires everything to have at lest read permissions for using it from Explorer.
As a possibility, you may want to try using FTP instead, it DOES support that, so users can upload files there and never know about them. Just done a quick test and it works with the Filezilla server and client.
