No - when I go to "manage wireless networks" I can double-click on each network to bring up its properties and there's a 'security' tab. WEP is under 'encryption' for both persistent and ad-hoc wireless networks, and does not appear under 'security'.
That is exactly what i got as well. It seem W7 adhoc wireless network needs security option to have WPA/WPA2 (as my network is WPA2, i'm not sure if changing my network to WEP would work, i have not tried), for iphone to connect. As it stand, with WEP, W7 adhoc just says "waiting for users..." and the iphone cannot connect to it.

That's not the same as my problem. I am able to make ad-hoc wireless networks of all flavours, open and secure, and the iphone and PC can connect without a hitch. The problem is that while they seem to connect OK, and Win 7 is set up to share its 3G internet connection, the iphone simply can't seem to reach the internet. When I go to an internet app such a facebook, I get the rotating "wait" symbol and eventually I get "not connected to internet".

Are you sure the adhoc wireless connection is not from W7. That is you cannot obtain internet off the iphone, rather the iphone can obtain internet off W7?

Unless you want to use tethering, which is off the iphone.

    iphone > adhoc wifi > laptop > 3g > internet

This is what I'm trying to do.

I got as far as having set up an adhoc wifi network on win 7 with WPA2 Personal and tried to connect to it with the iphone. The iphone asked for my password, and then sat at the 'joining network' screen without changing. The little wifi icon appeared at the top of the screen.

Meantime the adhoc network didn't show up in the wireless networks list in the sharing center, but it did show up in the little popup when you click the network icon in the tray, where its status was "waiting for users" (while iphone is 'joining network') I disconnected from it and tried reconnecting, but win 7 couldn't reconnect even though I entered the correct password.

That waiting for users status...was W7 wireless able to accept the iphone as incoming user? As i also get this waiting for users message, and my iphone failed to join, i do not know if this message goes away after, once the iphone was able to join.

The adhoc wireless will show in the Manage wireless network. I do not think in the sharing center, you can get both normal wireless and adhoc wireless showing, as i believe W7 either uses the normal wifi or the adhoc. One wireless adapter (physical) cannot be used with two connections at one time.

ICS!!! make sure yo internet ICS is pointed to your 3g connection, and thent he 3G connection has the Gateway/IP address of 192.168.0.1

then on your iphone you will have to enter the IPs manually

    IP: 192.168.0.2
    Subnet: 255.255.255.0
    Gateway: 192.168.0.1

    DNS: 192.168.0.1

I downloaded Connectify and it solved the problem (makes a wifi hotspot in your laptop).
