You should be able to use them both at the same time. Can you describe how the printer is connected now? Do you use a wireless router?

So you have created the ad-hoc wireless network from your laptop, and have both the printer and Touch joined this ad-hoc network. and only one can join at a time?

If the Touch Pro doesn't support Ad Hoc that's why you can't get both running at the same time. Ad Hoc isn't compatible with infrastructure mode which is what the Touch Pro uses. They're mutually exclusive.

The larger issue is if the Touch Pro supports using it's WiFi radio as a "hotspot" for sharing of the WAN connection. Many carriers frown on that and will disable it in the phone.

Unless the Touch Pro2 can support Adhoc, your only option is to find a way to get the laptop WiFi adapter to act as an Access Point or get an inexpensive wireless AP or router and disable the router component and use it as an AP. There are a few software packages out there that can turn a laptop wireless adapter into and AP, but you'll need to be very careful. Without good firewall and security software you run the risk of the laptop being compromised.

The problem you're running into is Adhoc isn't compatible with infrastructure mode which is the standard configuration.

Could it be that his laptop is wifi connected to the Touch, and he uses the ad-hoc wireless connection on the laptop for the printer connection.

If so, this will not work, as there is only one wireless adapter to share with either normal wifi or ad-hoc wifi. You cannot use both at the same time.
