RealTemp for Intel CPUs.
CoreTemp for Intel and AMD CPUs.
SpeedFan for Intel and AMD CPUs.

Actually it is HWMonitor from the same folks that make CPUZ,

Speedfan, my favourite for years, has a nice Sidebar Gadget so you don't have to have the app window open all the time. Its hard to find a download now, but luckily, I found one.
