Is there a handy utility anywhere that can tell me which ones are safe to untick in the System Configuration screen (msconfig)? The only one I felt safe to untick so far is 'Apple Mobile Device'.

you can disable for different reasons.

But the caution is always to have a good image of your drive for when the wheels fall off and you end up in the garbage because you disabled the wrong process.

I think the problem is that a severe slow down of a system after installing programs is not natural. You have a core i7 and tons of hard drive space. Nothing should be slowing that down at this point after just installing your favorite programs.
I think we need to step back and address what programs you have installed thus far and whether you have the proper AV protection on the machine to keep it in good working order. I have installed many programs on my quad-core machine that is slower than yours with less space and it is still almost as speedy as initial install.
Back in the XP day's Black Viper was really good, but this is Win 7 and no Black Viper needed. 7 is lean and mean without turning any services off, your only looking for trouble if you do. Windows 7 is very good about not starting up services unless they are needed. Don't fiddle with them. Now third party services are another story.
